Domaine de Pajot is situated on the eastern slope that overlooks Eauze, the capital of Armagnac. Damien Barreau runs this family estate. Since 2001 all 60 hectares are farmed organically. He makes deliciously thirst-quenching wines in all colors, using traditional grapes. He refers to his Quatre Cepages, ‘Four Grapes’, as his musketeers: all for one, one for all! Each ripens at a different stage, each brings something a little different to the blend.
