DOMAINE FLORENCE CHOLET

Upon meeting Florence Cholet, there is a quiet, cool confidence about her – reserved and yet gracious, self-assured but without pretention. Perhaps it’s no wonder. With a master’s degree in oenology, winemaking stints at Chateau de Pibarnon and Chapoutier, plus experience in Walla Walla and throughout Australia, Florence is eminently qualified. In 2019, and after several years working alongside her father, Florence officially took the reins of her family’s 4th generation estate, renaming it from Domaine Christian Cholet-Pelletier.


Situated in Corcelles-les-Arts, just east of Puligny and Meursault, the estate’s holdings span 7.5 hectares in Puligny, Meursault, Saint Romain, and Auxey-Duresses. Under Florence’s direction, the domaine no longer uses pesticides or herbicides, vineyards are ploughed, and all grapes are hand-picked. Vines range between 25 and 80 years old, with particularly old holdings in Puligny.


The whites see a long Vaslin pressing, 24-hour settling, and fermentation in barrel with a light bâtonnage (only if needed). Reds are afforded a gentle three-week maceration to extract the subtle aromas and preserve the fresh pinot fruit. In an effort to showcase terroir, Florence minimizes the use of new oak – reds see up to 10% new oak and whites never beyond 20%. Florence’s whites couple elegance and character, while her reds are particularly perfumed and wonderfully charming.
